Instant Pot Aloo Gobi

The Instant Pot Aloo Gobi is a popular and flavorful Indian dish that can be easily prepared using the convenience of your Instant Pot. With its simple ingredients and quick cooking time, this dish is perfect for busy weeknight dinners.

what is Aloo Gobi?

Aloo Gobi is a vegetarian Indian dish made with potatoes (aloo) and cauliflower (gobi). It is typically seasoned with a variety of Indian spices and can be served as a main dish or as a side dish.

Ingredients

2 tablespoons vegetable oil

1 large onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon turmeric powder

1/2 teaspoon red chilli powder (adjust to taste)

1 teaspoon salt (adjust to taste)

2 potatoes, peeled and cubed

1 small cauliflower, cut into florets

1 cup water

2 tomatoes, chopped

1/4 cup chopped cilantro leaves for garnish

1 tablespoon lemon juice

Instructions:

Turn on the Instant Pot and select the sauté function. Once hot, add the vegetable oil and heat it.

Add the chopped onion to the pot and sauté until it becomes translucent, about 3-4 minutes.

Add the minced garlic and grated ginger, and sauté for another 1-2 minutes until fragrant.

Add the ground cumin, ground coriander, turmeric powder, red chilli powder, and salt to the pot. Stir well to coat the onions with the spice mixture.

Add the cubed potatoes and cauliflower florets to the pot. Stir to combine them with the spice mixture.

Pour in the water and give everything a good mix.

Close the Instant Pot lid and set the pressure release valve to the sealing position. Select the pressure cook/manual mode and set the timer for 5 minutes on high pressure.

Once the cooking time is over, do a quick release of the pressure by carefully turning the pressure release valve to the venting position.

Open the Instant Pot lid and add the chopped tomatoes. Stir well and let it sit for a few minutes to combine the flavours.

Garnish the Aloo Gobi with chopped cilantro leaves and drizzle with lemon juice.

Serve hot with rice or flatbread.
