Spanish Style Beans and Vegetables on Rice

Something we all love in the colder months are hearty and filling meals. I’ve been recently hooked onto Spanish Cuisine and decided to create my own take on Spanish Beans and Vegetables on Rice. This recipe is packed full of vegetables, pinto beans and brown rice, this Spanish Style Beans and Vegetables on Rice dish is low fat and quick to prepare comfort food!

You may be wondering why I’m using brown rice instead of white rice. Brown rice is whole grain rice. It has a mild, nutty flavor, and is chewier and more nutritious than white rice. Brown Rice works well in this Spanish Beans and Vegetables on Rice Recipe, adding in a nice chewy texture and taste.

My take on Spanish Beans and Vegetables on Rice Recipe is smoky and sweet, infused with the spices of cumin, coriander, paprika, turmeric and some tangy lime juice. If you’re looking to spice up the dish, you can always add in some chilli paste and feel free to experiment with the spices and quantities to your liking.

  • 2 Cups Water
  • 1 Cup Brown Rice
  • ½ Cup Water
  • 1 Can Pinto Beans
  • 2 Cloves  of Garlic
  • 1 Brown Onion
  • 1 Red Capsicum
  • 1 Carrot
  • 1 Stalk of Celery
  • 1 Small Sweet Potato
  • 1 Bunch of Kale
  • 2 Tbs  Fresh Lime Juice
  • 1 Tsp  Coriander Powder
  • 1 Tsp  Cumin Powder
  • 2 Tsp  Paprika Powder
  • 1 Tsp  Turmeric
  • ½ Cup  Tomato Puree
  • Salt and Pepper to Taste


  • Using 2 Cups of Water and 1 Cup of Brown Rice, cook the rice according to packet instructions.
  • Heat a large skillet over medium heat, add in the ½ Cup water, Onioin, Sweet Potato and Spices. Cover the pan and lower the heat to medium. Cook, stirring occasionally, for 10 minutes.
  • Add in the remaining vegetables and Tomato Puree and cook covered until vegetables are tender (10 minutes should do).
  • Finally add in the Beans, Lemon Salt and Pepper to taste. Serve with the brown rice.
