Fluffy Chai Quinoa Pancakes Recipe | Gluten & Sugar Free

Quinoa Pancakes are one of my all time go to breakfast recipes. Not only do they fill me up for the morning, they are packed with lots of protein and nutrition! When deciding on what type of gluten free flour to use, I didn’t want to use anything highly process. Gluten Free flour mixes are usuallyfull of overly processed rice flour, tapioca starch and potato starch. To keep this recipe simple, I decided to make a fluffy pancake batter out of Quinoa Flour.

Ideally you can use store-bought quinoa flour, however if you have a coffee grinder and Quinoa flakes, you can blend this up to make your own flour in seconds. We decided to boost the Omega-3 nutrition in this gluten free pancake recipe by adding in ground Flaxseed, not only are they beneficial to your health – they make for a great egg substitute when mixed with water!

At our home I can’t get enough of pancakes! There are many ways you can make pancakes, usually with wheat flour, sugar and eggs. But here at the Vegan Kitchn, we’re on an mission to make pancakes that are not only vegan, but also gluten free and sugar free! For people who are on a sugar free diet, these Chai Quinoa Pancakes are sweetened with natural stevia. I buy the stevia with added erythritol which makes it taste identical to sugar!

While making the standard pancake one day, I thought why not try something new!? I decided to add in some Chai spices into the mixture. I decided to add in some cinnamon, Cardamom, Cloves, Ginger, Nutmeg and some Garam Masala for something more special!

Combined with the fluffy quinoa texture was the delightful Chai spices which really add something new to the good old fashioned pancake! Top these pancakes with some Maple Syrup and your favourite fruit!

  • ½ tbsp  Ground Flaxseed
  • 3 tbsp  Water
  • 1 Cup Quinoa Flour
  • 2 tbsp  Stevia
  • ½ tsp  Baking Powder
  • ½ tsp Cinnamon
  • tsp  Cardamom
  • tsp  Cloves
  • ¼ tsp  Ginger Powder
  • ¼ tsp Garam Masala
  • ¼ tsp Nutmeg
  • ½ tsp Vanilla Extract
  • Cup Almond Milk
  • Coconut Oil (optional)


  • In a small bowl prepare your Flax Egg by mixing the Flaxseed and Water and set aside.
  • In a separate bowl place the Flour, Sugar, Baking Powder, Salt and Spices. Stir the dry ingredients together.
  • Next add in the Almond Milk and Flax egg and stir until it makes a nice batter mixture.
  • Heat up your frying pan on a low to medium heat. You can cook the pancakes in Coconut oil. Once you see bubbles forming on the surface of the pancakes it's time to flip!
  • Optional: For a low fat option you can place a sheet of baking paper onto the pan and cook your pancakes on top of the paper.
  • Serve the pancakes with Maple Syrup and your favourite fruit!
