In a large mixing bowl, combine the almond flour, chopped apples, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients, mixing until well combined.
Scoop out portions of the dough, about a tablespoon each, and place them on the prepared baking sheet, flattening them slightly with the back of a spoon.
Bake for 12-15 minutes or until the edges start to turn golden brown.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
