Vegan Vanilla Pudding

 Ingredients

  • 1/4 cup cornstarch
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 3/4 cups unsweetened almond milk
  • 2 teaspoons pure vanilla extract

Directions

Now that you have your ingredients ready, let’s move on to the cooking process:

In a medium-sized saucepan, whisk together the cornstarch, granulated sugar, and salt. Gradually pour the almond milk while whisking continuously to ensure a smooth mixture.

Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens. This should take around 8-10 minutes.

Once the mixture has thickened, remove the saucepan from the heat and stir in the vanilla extract. Please give it a good mix, ensuring that the vanilla is evenly distributed throughout the pudding.

Cooling and Serving

Transfer the pudding to individual serving dishes or a large bowl. To prevent skin from forming on the surface, press a plastic wrap directly onto the pudding’s surface. Allow it to cool at room temperature for about 15 minutes before placing it in the refrigerator.

Let the pudding chill in the refrigerator for at least 2 hours or until it is completely set. Once ready, serve it as is or garnish with fresh fruit, crushed nuts, or a sprinkle of cinnamon.
