Best Vegan Butter Recipe

Ingredients

1 cup of refined coconut oil

1/2 cup of unsweetened soy milk

1/4 cup of refined or virgin olive oil

1 teaspoon of apple cider vinegar

1/2 teaspoon of salt

1/4 teaspoon of nutritional yeast

Directions

In a microwave-safe bowl, melt the coconut oil until it becomes a liquid. This will make it easier to blend with the other ingredients. Once melted, let it cool for a few minutes.

combine the melted coconut oil, soy milk, olive oil, apple cider vinegar, salt, and nutritional yeast in a blender or food processor. Blend on high speed until all the ingredients are well combined and the mixture is smooth and creamy.

Pour the blended mixture into a container or mould of your choice. You can use a small glass dish, silicone moulds, or ice cube tray. Smooth the top with a spatula or the back of a spoon.

Place the container with the vegan butter mixture in the refrigerator and let it chill for at least 2 hours, or until it becomes solid. This will allow the flavours to develop and the butter to reach the right consistency.
