Ingredients:

2 cups oat flour.

1/3 cup almond milk.

1 cup of strawberries.

A handful of dried currants.

5 tbsp coconut oil.

5 tbsp of maple syrup.

1 tbsp baking powder.

1 1/2 tsp vanilla extract.

1 tsp cinnamon.

1/2 tsp cardamom (optional).

A sprinkle of salt.

Instructions:

Add the coconut oil to the oat flour mixture and cut and blend until a crumbly dough forms with a pastry cutter or fork.

Incorporate the strawberry pieces and currants into all the wet ingredients as soon as they are cold.

Be careful not to over-mix the dry and wet components.

Shape the dough into a circle, 1 inch thick, on a baking sheet lined with parchment paper.

Cut into eight triangular pieces or cut them into the traditional round shape as I did and bake for 15-17 minutes.

You can enjoy it with jam, honey, or nut butter.
