Ingredients
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon matcha powder
1/2 cup vegan butter, chilled and cubed
3/4 cup almond milk
1 teaspoon vanilla extract
Directions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Whisk the flour, sugar, baking powder, salt, and matcha powder in a large mixing bowl. Ensure that the matcha powder is evenly distributed throughout the mixture.
Add the chilled vegan butter to the dry ingredients. Using your fingertips or a pastry cutter, gently incorporate the butter into the mixture until it resembles coarse crumbs.
Mix the almond milk and vanilla extract in a separate bowl. Pour the mixture into the dry ingredients and gently stir until a soft dough forms.
Transfer the dough onto a floured surface and knead it lightly until it comes together. Be careful not to overwork the dough.
