Half lb – Gluten-free pasta
6 Tomatoes (chopped)
2 Garlic cloves (crushed)
A half lb of Mushrooms
2 tbsp of olive oil
2 tbsp of Baby spinach leaves
Basil leaves – For garnishing
A pinch of Ground black pepper and salt
Prepare pasta according to the instructions given in the packet.
While the pasta is cooking, heat some oil in a pan and fry garlic and mushrooms in it.
Add spinach leaves and basil leaves to the pan when they change colour.
Stir them around for a while until the spinach leaves are adequately cooked.
Drain the water and add the pasta to the pan after the pasta has cooked.
Toss it around until the pan ingredients mix well with the pasta, and then take it out in a serving dish.
Serve while it is still warm!
