4 medium-sized potatoes, peeled and diced
1 onion, finely chopped
2 cloves of garlic, minced
4 cups of vegetable broth
1 cup of non-dairy milk (such as almond or soy milk)
1 teaspoon of thyme

Directions
In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become fragrant and slightly golden.
