- 1 ½ cups of gluten-free flour blend
- ½ cup of almond flour
- 1 teaspoon of baking powder

- ½ cup of coconut sugar
- ¼ cup of melted coconut oil
- 2 teaspoons of vanilla extract
- 1 tablespoon of apple cider vinegar
- Vegan chocolate glaze (optional)
- Assorted toppings (such as shredded coconut or chopped nuts)
Instructions
- Preheat your oven to 350°F (175°C) and grease a doughnut pan with coconut oil.
- In a large mixing bowl, combine the gluten-free flour blend, almond flour, baking powder, baking soda, and salt. Mix thoroughly.
- In a separate bowl, whisk together the almond milk, coconut sugar, melted coconut oil, vanilla extract, and apple cider vinegar until well combined.
- Gradually pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.
- Spoon the batter into the prepared doughnut pan, filling each cavity about three-quarters full.
- Bake the doughnuts for 12-15 minutes or until a toothpick inserted into the centre comes clean.
- Remove the doughnuts from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Optional Glaze and Toppings
- If desired, prepare a vegan chocolate glaze by melting your favourite dairy-free chocolate and dipping the cooled doughnuts into it. Allow the glaze to set before adding additional toppings.
- Get creative with your toppings! Sprinkle shredded coconut, chopped nuts, or colourful sprinkles onto the glazed doughnuts for an extra flavour and visual appeal.
