Vegan Gluten-Free Donuts recipe

Ingredients

1 ½ cups of gluten-free flour blend

½ cup of almond flour

1 teaspoon of baking powder

½ teaspoon of baking soda

¼ teaspoon of salt

¾ cup of unsweetened almond milk

½ cup of coconut sugar

¼ cup of melted coconut oil

2 teaspoons of vanilla extract

1 tablespoon of apple cider vinegar

Vegan chocolate glaze (optional)

Assorted toppings (such as shredded coconut or chopped nuts)

Instructions

Preheat your oven to 350°F (175°C) and grease a doughnut pan with coconut oil.

In a large mixing bowl, combine the gluten-free flour blend, almond flour, baking powder, baking soda, and salt. Mix thoroughly.

In a separate bowl, whisk together the almond milk, coconut sugar, melted coconut oil, vanilla extract, and apple cider vinegar until well combined.

Gradually pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.

Spoon the batter into the prepared doughnut pan, filling each cavity about three-quarters full.

Bake the doughnuts for 12-15 minutes or until a toothpick inserted into the centre comes clean.

Remove the doughnuts from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
