Whether you are a vegan, vegetarian, or simply looking to reduce your meat consumption, vegan mushroom bacon is a versatile and delicious option that can be enjoyed in a variety of dishes.

8 large king oyster mushrooms

1/4 cup soy sauce

2 tablespoons liquid smoke

2 tablespoons maple syrup

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

Preheat your oven to 350°F (175°C).

Clean the king oyster mushrooms and pat them dry.

In a bowl, whisk together the soy sauce, liquid smoke, maple syrup, apple cider vinegar, smoked paprika, garlic powder, onion powder, and black pepper.

Slice the king oyster mushrooms lengthwise into thin strips, resembling bacon slices.

Place the mushroom strips into the bowl with the marinade, making sure they are fully coated.

Let the mushrooms marinate for at least 30 minutes, allowing the flavours to infuse.

Line a baking sheet with parchment paper and place the marinated mushroom strips on it in a single layer.

Bake in the preheated oven for 20-25 minutes, or until the mushrooms are crispy and golden brown.

Remove from the oven and let them cool for a few minutes before serving.

Enjoy your homemade vegan king oyster mushroom bacon in sandwiches, salads, or as a side dish!
