Spicy Sofritas Tofu

Spicy sofritas tofu has become a popular choice for vegans and vegetarians looking for flavorful, protein-packed options. This dish, made with marinated tofu cooked in a spicy sauce, offers a delicious and satisfying alternative to meat-based meals.

Ingredients:

1 block of firm tofu, drained and pressed

2 tablespoons vegetable oil

1 small onion, finely chopped

2 cloves of garlic, minced

1 jalapeno pepper, seeds and ribs removed, finely chopped

1 red bell pepper, thinly sliced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chilli powder

1 tablespoon tomato paste

2 tablespoons soy sauce

1 tablespoon lime juice

Salt and pepper to taste

Fresh cilantro leaves, chopped (optional, for garnish)

Instructions:

Start by preparing the tofu. Drain excess water and press it for about 15-20 minutes to remove as much liquid as possible. Once pressed, crumble the tofu by hand into small, bite-sized pieces.

Heat the vegetable oil in a large skillet or pan over medium heat. Add the onion, garlic, jalapeno pepper, and red bell pepper. Sauté for about 5 minutes until the veggies are slightly softened.

Add the crumbled tofu to the pan and cook for another 5 minutes, stirring occasionally, until the tofu starts to brown slightly.

In a small bowl, mix the cumin, smoked paprika, chilli powder, tomato paste, soy sauce, lime juice, salt, and pepper. Pour this sauce into the pan with the tofu and veggies, stirring well to evenly coat everything.

Reduce the heat to low and let the sofritas simmer for about 10 minutes, allowing the flavours to meld together and the tofu to absorb the sauce. If the mixture starts to look dry, you can add a splash of water or vegetable broth.

Once cooked, remove the pan from the heat and taste for seasoning, adjusting salt, pepper, or spices if needed.

Serve the sofritas hot, garnished with fresh cilantro leaves if desired. You can enjoy it in tacos, burritos, bowls, or as a filling for other dishes.
