Ingredients
Vegan chocolate kisses (for topping)
1 cup of vegan margarine
1 cup of creamy peanut butter
1 cup of granulated sugar
1 cup of brown sugar
1/4 cup of unsweetened almond milk
2 teaspoons of vanilla extract
3 cups of all-purpose flour
1 1/2 teaspoons of baking soda
1/2 teaspoon of salt
Directions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, cream together the vegan margarine, peanut butter, granulated sugar, and brown sugar until well combined. Add the almond milk and vanilla extract, and mix until smooth.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until a thick dough forms.
Roll the dough into small balls, approximately 1 inch in diameter. Place the balls onto a baking sheet lined with parchment paper, leaving some space between each cookie.
Bake the cookies for 10-12 minutes, or until they are lightly golden around the edges. Remove them from the oven and immediately press a vegan chocolate kiss into the centre of each cookie.
Allow them to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
