Ingredients
2 tablespoons olive oil
1 cup red potatoes, peeled and diced
½ onion, diced
½ cup red pepper, diced
½ cup green pepper, diced
1 teaspoon jalapeño, minced
1 clove garlic, minced
¼ cup parsley
16 ounces of firm tofu
½ cup unsweetened soymilk
4 teaspoons cornstarch
2 tablespoons nutritional yeast
1 teaspoon mustard
½ teaspoon turmeric
1 teaspoon salt
¼ teaspoon black pepper
Directions
Add the oil to a large pan and sauté the potatoes, onion, peppers, jalapeño, and garlic on medium heat for about 15–20 minutes.
Meanwhile, in a blender or food processor, combine the rest of the ingredients until smooth, then pour the mixture into the slow cooker with the potatoes.
Cover, and cook on high heat for 4 hours, or until the frittata has firmed.
