Ingredients
- 2 tablespoons olive oil
- 1 cup red potatoes, peeled and diced
- ½ onion, diced
- ½ cup red pepper, diced
- ½ cup green pepper, diced
- 1 teaspoon jalapeño, minced
- 1 clove garlic, minced
- ¼ cup parsley
- 16 ounces of firm tofu
- ½ cup unsweetened soymilk
- 4 teaspoons cornstarch
- 2 tablespoons nutritional yeast
- 1 teaspoon mustard
- ½ teaspoon turmeric
- 1 teaspoon salt
- ¼ teaspoon black pepper
Directions
Add the oil to a large pan and sauté the potatoes, onion, peppers, jalapeño, and garlic on medium heat for 15–20 minutes.
Meanwhile, in a blender or food processor, combine the rest of the ingredients until smooth, then pour the mixture into the slow cooker with the potatoes.
Cover, and cook on high heat for 4 hours, or until the frittata has firmed.
