Ingredients
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup almond milk (or any non-dairy milk)
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
Instructions:
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, mix together the almond milk, vegetable oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the pancakes tough.
Gently fold in the blueberries.
