4 ripe bananas
2⁄3 cup maple syrup
4 tablespoons non-dairy milk
1 teaspoon vanilla
2 cups whole wheat flour
1 flaxseed egg
1/2 tsp ground cinnamon
1 teaspoon baking powder
1⁄2 teaspoon salt
Direction
Preheat the oven to 350 degrees. grease an 8×4″ loaf pan or for an oil-free version line the pan with baking paper.
Mash the bananas with a fork in a large bowl. Add 1 tbsp flaxseed to 2 tbsp water to make the flax egg.
Add the maple syrup, vanilla, and water and mix well.
In a medium bowl mix the flour, baking powder and salt.
Pour the flour mixture into the bananas. mix well (if you want to add in chopped walnuts or almonds).
Pour batter into the prepared loaf pan.
Bake for 55-65 minutes or until a toothpick inserted into the bread comes out clean. Let cool and serve.
