Ingredients
470ml full-fat soy milk.
90g old-fashioned rolled oats.
40g chia seeds.
15ml pure maple syrup.
25g crushed pistachios for garnish
Blackberry jam:
500g blackberries.
45ml pure maple syrup.
30ml water.
45g chia seeds.
15ml lemon juice.
Directions
Make the oats; in a large bowl, combine soy milk, oats, chia seeds, and maple syrup.
Cover and refrigerate overnight.
Make the jam; combine blackberries, maple syrup, and water in a saucepan. Simmer over medium heat for 10 minutes.
Add the chia seeds and simmer the blackberries for 10 minutes.
Remove from heat and stir in lemon juice. Mash the blackberries with a fork and place them aside to cool.
Assemble; divide the oatmeal among four serving bowls or you can use glasses like I did.
Top each with blackberry jam.
Sprinkle with pistachios before serving.
